Pork Loin is one of my favourite cut meat, lean meat, hardly any fats and simple to prepare. However you will need to tenderise the meat. My seasoning is rather simple, soy sauce and pepper, at the end of cooking add rice wine or any wine. This will allow the meat to be juicy.
Tenderizing the meat, on the fat part few cuts needed to prevent the meat from shrinking
Soy Sauce and Pepper Seasoning
It takes about 1 min on each side.
Add rice wine and let the flame build up
