油炸鯛魚片 Deep Fried Sea Bream Fillet

There are many kinds of Sea Bream, in Taiwan and Japan mostly they are Red Sea Bream. It is an auspicious food served during Japanese New Year. As a whole fish, it is better grilled or BBQ. 
I have decided to do a very simple "Fish and Chip style" but without chips, vegetable instead, takes less than 20 mins to prepare. 




Ingredient

  • Sea Bream fillet
  • oil
  • salt 
  • pepper
  • corn starch 
  • egg
  • Japanese bread crumb (Panko)
Method
  1. Season the fillet with salt and pepper
  2. Pad fillet with corn starch to absorb the moisture
  3. Break an egg, use half and mix it on a plate 
  4. Dip fillet in egg, coat it both sides and allow the remaining egg to dripped 
  5. Coat fillet with bread crumb and shake off any loose bread crumb
  6. Heat pan with some oil under low heat
  7. Place a piece of bread crumb in the oil, once it sizzle the oil is hot enough
  8. Place fillet in pan and fried till golden brown on both sides, should take less than 5 mins
  9. As for vegetable serving, you can use carrot, broccoli which every you like. Heat a pot of boiling water, add salt and some olive oil and blenched the vegetable. 
  10. Served fillet with drip of lemon juice and tartar sauce. We used creamy Caesar salad sauce instead
